CAROLINE Murphy of West Cork Eggs is in line for a prestigious Business All Star award which recognises Irish companies who have distinguished themselves over the past year.
Caroline, who bought four hens back in 2009 – to help her kids learn where food comes from and who now has 3,000 free range birds – has been nominated in the agri-business category.
Originally from London, Caroline and her family live on a farm between Leap and Rosscarbery, and her motto is that a ‘happy hen is a happy customer’.
She believes in giving their hens ‘good food, freedom and fun and in return they give us delicious eggs which can be used in so many different ways.’
Caroline has also been part of an initiative called ‘Eggsellent Breakfasts’, which promotes healthy eating among school children and encourages them to ditch sugary cereals in favour of more nutritious options – like eggs.
Future plans include looking at developing spin-off egg products.
The All Stars will be presented in Croke Park this week.
