A Skibbereen supermarket is getting behind a local solicitor who has developed a recipe for tasty, low-carbohydrate bread.

A SKIBBEREEN supermarket is getting behind a local solicitor who has developed a recipe for tasty, low-carbohydrate bread.

Field’s SuperValu has agreed to produce the bread using a recipe devised by Liz Murphy, a solicitor with Wolfe & Co.

Liz, a member of the Murphy family, former owners of the West Cork Hotel, told The Southern Star she came up with the recipe after going on an extreme diet to lose weight.

‘Like a lot of people, I discovered that carbohydrates were the main culprit for my weight gain,’ she said.

‘I started looking more carefully at what I was eating, but I quickly realised that the carb I’d miss most in an on-going low-carb diet was bread, so I went online looking for a decent recipe to make my own.

‘Those breads left a lot to be desired, so I started making it myself, using a combination of different recipes, until I had what I considered was the basis for a satisfying low-carb loaf.

‘My friend, Declan Ryan of Arbutus Breads, was kind enough to taste the bread in the various stages of production and offer his opinion, which was most helpful in creating the end product.’

Initially, Liz made the bread just for herself, but when others expressed an interest she realised there was no bread like it on the market and that she could, potentially, turn her hobby into a small business.

At 4.9g a loaf, it has a much lower carbohydrate content than any other bread on the market. And the fact that it is grain-free; that all of the ingredients are gluten free; that it has no preservatives; no yeast; is high in Omega 3, fibre and protein; and is low in sugar, also makes it a healthy option all round.

Liz said she was so encouraged by the response to the finished product that she mentioned it to John Field, the owner of SuperValu in Skibbereen. The supermarket owner was so impressed by Liz’s bread that he agreed to produce it and sell it for her. 

An official launch of Liz’s Grain Free Bread will take place on September 16th and 17th during the Taste of West Cork food festival. 

Liz will also be taking a stand at Skibbereen Farmers’ Market on Saturday, September 16th.
