Too Good To Go said that in modern times, families often overbuy ingredients on Pancake Tuesday, leading to excess food waste.
The app shared some tasty solutions to keep with the original spirit of the day.
Leftover pancake batter can be stored in the fridge for around two days. If you have a waffle iron, Too Good To Go recommend adding 1-2 tablespoons of melted butter to the batter, and pouring it into the waffle maker, cooking it as usual.
The results will be slightly softer than traditional waffles but still delicious, and you can top with all your leftover toppings.
The enterprise also suggested baking leftover batter instead of frying it to create pancake muffins. Pour the batter into a lightly greased muffin tin, add fillings such as berries, chocolate or cheese, and back at 180 °C for 12-15 minutes.
For those who are truly committed to combatting food waste, Too Good To Go shared a creative recipe that uses a whole banana, skin and all. Simply blend two well-washed bananas with the peel on with cocoa powder, an egg, oats and a splash of milk until smooth, then heat a little butter or oil in a pan and spoon in the batter.
Cook until bubbles form, flip and fry for another minute until set, then stack up and finish with your favourite toppings.
However you choose to celebrate Pancake Tuesday, Too Good To Go hopes that their top tips will households around West Cork be more conscious around food waste.
